One of the many healthy drinks for summer using the versatile mango; ‘Panna’ is a drink that you can prepare and store in the refrigerator as a squash.

  • 2-3 medium sized raw mangoes to make 1 cup mango pulp
  • 2-3 crushed or powdered black peppers
  • 2-3 crushed or powdered cardamoms
  • 2 cups of jaggery powder
  • 2 teaspoons of black salt
  1. Steam the mangoes in a pressure cooker to make them soft.
  2. Once they are done, cool them slightly and scrape out the pulp. You should have 1 cup (250 ml) of raw mango pulp to start.
  3. Now mix in all of the other ingredients and stir well.
  4. Blend it all in a mixer to form a smooth and consistent paste
  5. Let it cool down further at room temperature
  6. Store in a glass bottle
  7. To make the drink, add one tablespoon ‘panna’ to a glass of chilled water.
  8. Serve with ice cubes and garnish with mint leaves for added flavor.

  • Chilled curd – 250 ml
  • Water – 150 ml
  • Stir fried onion shallots – 3-4
  • Fine chopped green chili – ½
  • Stir-fried Ginger juveniles – 3-4
  • Curry leaves – dried or fried – 5-6
  • Salt – ½ teaspoon
  • Sugar – ½ teaspoon
  • Pepper – ½ teaspoon
  • Roasted Cumin powder – ½ teaspoon
  1. In a blender, mix the curd, salt, sugar, cumin, pepper, and water till the mixture is frothy and foamy (30 – 50 seconds)
  2. Use a mortar to coarsely crush the ginger, onion, chili, and curry leaves together.
  3. Add these to the blender as well and blend well with the curd mixture.
  4. Pour into the glasses and serve chilled with ice cubes

Variation – Buttermilk can also be had sweetened by adding jaggery or sugar to taste. Make sure that you add less water and the curd you use is well set and sweet by itself also. Add rose water or ground cardamom to it for added flavor.

  • Mango puree – 50 ml per glass
  • Honey  – 1 tablespoon per glass
  • Lemon juice- 1 tablespoon per glass
  • Cucumber slices – 2 slices per glass
  • Ginger ale syrup – 1 tablespoon
  • Chilled Water  – 150 ml per glass
  • Ice cubes
  1. Take a mocktail shaker and to the bottom of it place the cucumber slices

Variation – instead of chilled water you can also use sparkling water for that added fizz and fun with this summer drink.

  • Edible rose water or rose syrup – 2 tablespoons
