Ingredients

  • Eggs: 3 to 4
  • Cooking oil: 2 tablespoon
  • Turmeric powder: 1/8 teaspoon
  • Salt: ¼ teaspoon
  • Cumin seeds: ½ teaspoon
  • Onion: ½ to ¾ cup
  • Green chilli: 1
  • Garlic ginger paste: ¾ to 1 teaspoon
  • Garam masala: ¾ to 1 teaspoon
  • Red chilli powder: ½ to ¾ teaspoon
  • Curry leaves 1 spring/coriander leaves (2 tablespoon)/mint leaves (8) (optional)
  • Chopped tomato: ¼ cup (optional)
  • Capsicum: ¼ cup

Method

  1. Take a bowl and break 2-3 eggs in it. Then add 1/8 teaspoon of turmeric powder. Also, include ¼ teaspoon of salt. You can adjust the quantity of salt as per your need. 
  2. Blend the eggs well, and you can add a few tablespoons of milk if you like. One notable step that is optional here is that you can directly put the eggs in the frying pan without blending them. But you will miss the fluffy texture of the scrambled eggs.  
  3. After that, heat your frying pan with 2 tablespoons of oil. Then, add cumin seeds to the oil. Add some curry leaves when the cumin seeds will start to splutter. Let the leaves turn crispy. But adding curry leaves is optional, too. 
  4. Following the previous step, add some chopped onion and green chilli. 
  5. Blanch the onions until they become golden. Then, add garlic ginger paste to the cooked onions. Cook these ingredients again. It will remove the raw smell of ginger and garlic. 
  6. Add a finely chopped tomato or capsicum. You can even add both of these veggies. But you can skip this step if you don’t like capsicum or tomato.
  7. Cook the veggies with onions and let them mix well. Then add some red chilli powder and garam masala – a mixture of different spices. Fry the ingredients until the garam masala smells good.
  8. Now, pour the eggs into the frying pan. 
  9. Cook the eggs well. Add more chilli powder and garam masala if required. Fry the ingredients and continue cooking until the smell of chilli powder has vanished. But be careful about overcooking. It will hamper the softness of eggs.
  10. Check the taste and add more salt to it if needed. Garnish it with coriander leaves. Furthermore, squeeze some lemon juice over it.
