Dal Vada Ingredients

  1. 1/2 Onion , finely chopped
  2. 1/4 cup Coriander leaves
  3. 1 inch Ginger, chopped
  4. 3 cloves Garlic
  5. Salt to taste
  6. 2 tbsp Oil
  7. 1/4 tbsp Baking soda
  8. 1 cup Chana dal, soaked in water for 3-4 hours
  9. 1/2 tbsp Fennel seeds 
  10. 8 Curry leaves
  11. 1/2 tbsp Cumin seeds 
  12. 2 Green Chillies

Method

Step 1: Wash and soak dal for 3–4 hours before beginning to prepare Baked Chana Dal Vada Recipe. Drain, rinse, and put aside.

Step 2: Set the oven to 200 degrees Celsius for baking.

Step 3: Take chana dal, fennel seeds, cumin seeds, green chilies, curry leaves, fresh coriander, ginger, and garlic cloves, and put them in a blender or food processor. Add salt to taste and ground the mixture into a coarse consistency. Only add water if necessary.

Step 4: Now transfer the mixture to a mixing basin and add baking powder and chopped onion.

Step 5: Put some oil on your palms before starting to shape the mixture into flat discs that are 2-3 inches in diameter and placing them on a baking sheet covered with parchment paper.

Step 6: Bake the vadas for 18 to 20 minutes, or until they are a golden brown colour.

Tips to Enhance the Taste

  1. While grinding the dal, avoid adding water.
  2. Place mixture in refrigerator for 15 to 20 minutes. Thus, the masala vada would be crispier.
  3. Blend the lentils until the mixture is thick, gritty, and well-combined. The vadas will break or could not get crispy if there is a lot of moisture present.
  4. Create flat vadas out of the dough. Avoid moulding them too thickly since they will become fluffy in the middle and taste bad.
  5. For additional flavour, grind together 1/2 teaspoon of fennel seeds (saunf), 1/2 teaspoon of dried coriander seeds , 5-6 black peppercorns (sabut kali mirch), and 2 garlic cloves. Add this mixture to the crushed chana dal mixture.
