Drumsticks, or the long, thin, green pods of the Moringa tree, are used in its preparation, along with several other spices, to produce a flavourful and fragrant curry. The thick and spicy curry goes wonderfully with the sweet and nutty flavour of the drumsticks, creating a delicious combination. Drumstick Curry Recipe

Ingredients

  • 3 Drumstick / Sehjan ki phali / Singi
  • 4 medium Potatoes 
  • 3 medium Tomatoes
  • 3 Green chilli
  • 1/4 inch Ginger 
  • 3/4 tsp Turmeric Powder 
  • to taste Salt 
  • 1 tbsp Coriander Powder 
  • 1 tsp Kashmiri Chilli Powder
  • 1/2 tsp Red Chilli powder 
  • 1 1/2 tsp Dried Fenugreek 
  • 2 tbsp Roasted gram flour 
  • 1/4 tsp Garam masala powder optional

Tempering/ Tadka

  • 4 tbsp Mustard Oil 
  • 1 tsp Cumin Seeds 
  • 1/2 cup Green Peas 
  • 1/4 tsp Asafoetida 
  • Few Curry Leaves

Method of Preparation

Step 1: Wash and peel the potatoes, then cut them into medium-sized pieces.

Wash the drumsticks and peel one side, then chop into 1-inch pieces and set away.

Step 2: To make a smooth puree, coarsely chop the tomatoes and grind them with green chillies and ginger. 

Step 3: In the pressure cooker, heat 1 tsp cumin in medium hot mustard oil or your choice of oil.

Step 4: Let the cumin crackle, then add the asafoetida, curry leaves and tomato puree, and simmer over medium heat while stirring.

Step 5: Now add the coriander powder, kashmiri chilli powder, red chilli powder, turmeric, kasoori methi and salt, and continue to stir and cook until it thickens and begins to release oil from the sides.

Step 6: The roasted gram flour has now been added. (It is added to make the curry thick and smooth in texture.) Stir in the diced potatoes and drumsticks, then continue to stir-fry for a few minutes. Now stir in the peas thoroughly. Adding several slit green chillies is an alternative.

Step 7: Add 2 cups of water (according to your requirement of curry’s consistency). 

Step 8: Wait until the cooker has completely cooled down before closing it and pressure cooking for two whistles on medium heat.

Step 9: Check the status of the potatoes by opening the cooker. Cook for one more whistle, if necessary.

Step 10: Avoid overcooking so as to avoid the drumsticks being too soft and ruining the appearance and texture of the curry.

Step 11: After 2 minutes of boiling on medium heat, remove the cooker’s lid.

Step 12: Add garam masala and fresh coriander to finalise your drumstick aloo curry. Enjoy with roti, parathas, steamed rice, or pulao.

Tips to Enhance the Taste

  1. Keep in mind to use moringa pods that are fresh and green. You should avoid using mature, dry, or woody pods because they take a long time to cook. In addition, if they are too dried out or woody, avoid using them.
  2. Add more water for a thin pouring consistency and less water for a little thicker curry. 
  3. A sprinkle of fresh herbs like cilantro or mint can add freshness and depth of flavour to your drumstick curry.
  4. A squeeze of fresh lime juice over the curry, just before serving, can elevate the flavours and add a punch to it.

Serving Ideas

Serve drumstick curry with steamed rice or pilaf for a classic and filling meal. Pair the curry with Indian flatbreads like roti or naan for a more traditional meal. Serve the curry with breads like pita, sourdough, or French bread.
