Ingredients
- 2 cups whole wheat flour
- 1/2 cup grated carrots
- 1/2 cup grated cauliflower
- 1/2 cup grated zucchini
- 1/2 cup chopped spinach
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon salt (or as per taste)
- 2 tablespoons oil (plus more for cooking)
- Water as required
Method
Step 1: Mix in a big bowl the flour, grated vegetables, spices, salt and oil.
Step 2: Mix all those things together gradually, then slowly blend water to make a fine dough. Cover with a damp cloth and let rest for 15 – 20 minutes.
Step 3: Cut smaller pieces from the dough and form small balls.
Step 4: Lightly dust the rolling board with some flour, then using a rolling pin; roll out each ball to form circles about 6 – 7 inches wide.
Step 5: Heat a griddle or tawa using moderate heat. Now put the rolled-up paratha in the tava and cook it for about one or two minutes.
Step 6: Turn it over and pour a little oil on top of it. Let cook for 1 – 2 minutes till brown spots form around each side of it.
Step 7: Do likewise to the rest of the dough balls.
Step 8: Heat and serve hot with yoghurt, chutney or pickle.
