Carrot Soup Recipe

Ingredients

  • 1 tablespoon oil
  • ½ cup chopped onions
  • ½ teaspoon chopped garlic
  • 400 grams carrots, diced or cubed
  • 2 tablespoons chopped celery
  • ½ teaspoon cumin seeds
  • ½ teaspoon salt or add as per taste
  • 2.5 cups Vegetable Stock or water
  • ¼ to ½ cup water – while blending, optional
  • ¼ to ½ teaspoon freshly crushed black pepper
  • 1 to 2 teaspoons chopped parsley or chopped cilantro (coriander leaves)
  • ¼ teaspoon lemon juice – optional

For Garnish

  • 1 teaspoon chopped parsley or chopped cilantro (coriander leaves)
  • ⅓ cup bread croutons – optional

Method

Step 1:  Heat sunflower or olive oil over low to medium-low heat in a thick-bottomed pan or saucepan. Add the chopped garlic and onions. Until the onions are tender, sauté over a low to medium heat.

Step 2: Add salt, chopped celery, carrots, and cumin seeds. Make a good mixture. Water or vegetable stock should be poured. Once more mix and stir.

Step 3: Add a lid to the pot. Until the carrots are tender, simmer on a low or medium heat. Check the liquids a few times while cooking to see if they have dried or not. If the liquids have dried up, add an additional 1/4 to 1/2 cup of boiling vegetable stock or hot water.

Step 4: By using a fork or knife, check a few carrot pieces. It should be simple to remove the carrots with a fork or knife.

Step 5: Turn off the heat when the carrots are done cooking. The combination will include some liquid. As we will use these liquids when blending the carrots, let them remain in the mixture. Warm up or reduce the heat of the soup mixture.

Step 6: In a blender or grinder, combine the entire mixture with the liquids. You can even puree the carrots using an immersion blender.

Step 7: Blend until the mixture is smooth. While blending, add 1/4 to 1/2 cup room temperature water to achieve the desired soup thickness. Put all of the pureed carrots in the same skillet or pot.

Step 8: Continue to heat the soup in the pan on the hob. Stir at regular intervals. If the carrot soup appears too thick, add some additional boiling water or hot vegetable stock.

Step 9: Season with black pepper and chopped parsley after the soup is heated. Mix thoroughly and remove from heat. You can also use fresh cilantro leaves (coriander leaves) or fresh basil instead of parsley.

Step 10: This action is not required. Add 1/4 teaspoon of lemon juice to the soup for a hint of light sourness. This action is not required. Add 1/4 teaspoon of lemon juice to the soup for a hint of light sourness.

Tips to Enhance the Taste

  • The recipe can be made with either red or orange carrots.
  • Make use of young, sensitive carrots. Avoid carrots since they are fibrous and tough.
  • You can use any oil with a neutral flavour. Even a vegetarian carrot soup can be made with butter.
  • The carrot soup can be spiced up with any seasonings you like. However, remember the flavour and taste of the carrots so that the seasonings or spices balance or enhance the best flavour and taste in the soup.
  • Vegetable stock can be substituted with water.
  • Due to their high sodium content, canned vegetable stocks are preferable than homemade versions.

Serving Ideas

  • Put the soup in bowls or glasses to serve. Add some parsley, cilantro (coriander leaves), or another fresh herb of your choosing as a garnish. If desired, add some bread croutons on top.
  • The bread croutons in this soup are delicious. Simply toast baguette or bread that is one or two days old in the oven or on a tawa to make croutons. Sliced into cubes after toasting, they go well with vegan carrot soup.
