Egg Roll Recipe

Ingredients

  • Salt- 1 teaspoon
  • Refined oil- 2 teaspoons
  • Red chilli powder- 1 teaspoon
  • Atta- 1 cup
  • Chat Masala- 1/2 teaspoons
  • Onion- 1 
  • Cucumber-1 
  • Tomato- 1 
  • Coriander- 8 g
  • Egg- 3 
  • Ghee- 1 teaspoon
  • Lemon Juice- 1 tablespoon
  • Water- 1/4th cup
  • Green Chillies- 2 pieces

Method

Step 1: Combine atta, ghee, and salt in a mixing basin. Gradually pour in the water. Mix and knead the dough.

Step 2: Divide the dough into equal-sized balls. Take another bowl, crack the egg into it, add a pinch of salt, and whisk it well. Set aside.

Step 3: Roll out a thin round chapati and brush with 1/2 teaspoon oil and flour.

Step 4: Holding a 1/3-inch wide strip with your first two fingers and thumb from the top edge of the wrapped raw paratha, lift and fold backwards so the top edges remain on top.

Step 5: Now, roll the strip into a swiss roll form. Press and stick the outside end of the roll directly on the surface. Allow the dough to rise for 5 minutes.

Step 6: Flour the dough and roll it out lightly using a rolling pin.

Step 7: Cook the paratha on one side with a little oil to make it crispy, then flip it to the other side, add the whisked egg and distribute it all over, once it becomes a little crispy, turn the egg side paratha towards the tawa and cook for a few minutes.

Step 8: Finely slice the onion and mince the green chillies for the stuffing. Peel and deseed the cucumber, then cut it into tiny strips. Cut the tomato into julienne strips.

Step 9: In a mixing bowl, combine the sliced onion, green chilli, coriander leaves, and cucumber strips, along with lemon juice, a teaspoon of salt, chat masala, and red chilli powder. Mix thoroughly and set aside.

Step 10: Take a cooked paratha, egg side up, and fill it in the centre. Roll the paratha and seal the edges. Serve hot or warm with green or garlic chutney.
