Ingredients

  • 4 Capsicums
  • 2 Spoons of oil
  • 1/2 Cup chopped onions
  • 1 Spoon of minced garlic
  • 1 Cup veggies (carrots, beans, peas – chopped)
  • 1 Cup mashed potatoes
  • 1 Teaspoon of salt 
  • 1 Teaspoon of red chilli powder
  • 1 Teaspoon of cumin powder
  • 1 Tablespoon of coriander powder
  • 1 Teaspoon of garam masala
  • Coriander leaves (chopped)

Method to Make This Recipe

You can make this recipe in about 35 minutes in eight steps. The preparation time may take about 15 minutes. 

Step 1: Preheat your oven to 180 degrees Celsius.

Step 2: Remove the top portion of the capsicum and its seeds.

Step 3: Add the chopped onions and garlic to the pan and saute until they become translucent.

Step 4: Add chopped vegetables to the pan and saute for a few minutes.

Step 5: Add mashed potatoes, salt, red chilli powder, cumin powder, coriander powder and garam masala. Mix all of these well and cook for approximately 2 minutes more.

Step 6: Turn off the heat and add coriander leaves. Let it cool and then stuff the capsicum with this mixture.

Step 7: Apply oil to the stuffed capsicum, put them on the baking tray, and bake them for about 20-25 minutes until the capsicum is cooked. Also, ensure the stuffing is golden brown.

Step 8: Serve them with green chutney or your favourite dips.

  • Look for a medium-sized capsicum that looks firm to hold the stuffing together.
  • Use sharp knives to cut the top portion of the capsicum evenly.
  • Use a spoon to remove the seeds and remove them entirely to have space to stuff them with a filling.
  • Make sure to chop the vegetables finely so that they cook evenly. You can also add cheese or breadcrumbs for a crispy texture.
  • Use your spoon to stuff the mixture and press down while stuffing so you have more space.
